Cod Fish Sticks
Shawna's Roasted Salmon w/Macadamia Cilantro Crus
1 pound cod, sliced into sticks
Kamut flour for dredging
salt and pepper
2 eggs
minced fresh garlic
grated lemon peel from one organic lemon
homemade Spelt bread crumbs (toast/dry out in oven and mince/crush--I was in
a hurry so mine were more like small bread cubes rather than crumbs but no harm)
paprika
Heat oven to 350.
Beat eggs and add garlic and grated peel.
Mix salt and pepper into flour.
Dredge fish pieces in this order: flour, then egg mixture, then breadcrumbs.
Add to an oiled pan (I had no butter so used coconut oil instead) and brown
on each side, about 2 minutes.
Place in an oiled oven pan, sprinkle with paprika, and bake for about 15 minutes.
Cod is down when knife can flake through easily when prodded. Serve with lemon
wedges.

1/4 cup macadamia nuts
1/4 cup cilantro
4 tbs butter, divided
1 teas lemon zest
1 2 1/2 pound salmon fillet
salt and pepper
1 tbs lemon juice
*heat oven to 450. In food processor combine nuts, cilantro, 3 tbs butter and
zest and pulse.
*grease your pan with butter (I bet coconut oil would be good though and better
at 450) put salmon flesh side up, season it with salt and pepper, then rub the
nut/cilantro mixture on it. Roast 15 minutes and drizzle with lemon juice.
