Here's my recipe . It's a bit sweet due to the maple syrup but
my kids eat any raw veggie with this dressing though because of that.
1/2 cup balsamic vinegar
1 tsp. garlic and or shallots
2 tab. dijon mustard
3 tab. maple syrup (you could use less)
1 cup extra virgin olive oil
sea salt and pepper to taste if desired
I use a hand held blender but you can use a regular blender for this. Blend
everything except the oil. In a stream add the oil and blend until emulsified.
I keep this in a glass jar and it will keep in the fridge for several days if
not longer. Enjoy

1/2 cup fresh lemon juice (I used 1/3 cup though)
1 1/2 cups olive oil (again I used a bit less)
2 tab minced ginger (I used 1/3 cup)
1/3 cup minced garlic (I used 2 tab)
3 tab nama shoyu (I used another raw tamari from Japan)
Blend all. I bottled mine in a glass salad dressing bottle and we ate it all week.

Squeeze the juice of two oranges and one lemon into a wide-mouth jar. Add pressed garlic.....I use about 8-10 cloves, but I am a garlic addict....I think 3 or 4 would suffice, LOL. Then add a handful of fresh (or dried) parsley, about 3/4 cup of nutritional yeast, and blend with a hand blender. When it is blended, it should not be really runny. If it is, add more yeast. Once it is the consistency of ketchup (?), start drizzling olive oil into the jar while mixing. It is done when it suddenly thickens up. Oh, and I add either Herbamare seasoning or some seasalt.

The only thing extra I did was to add celtic sea salt, dh and I love our salt! I used store bought sour cream and mayo, organic, but would imagine it would be great with homemade
